1 tsp salt, divided
½ tsp garlic powder
½ tsp onion powder
½ cup unsweetened, plain plant-based milk
2 cups whole-grain bread crumbs
1 Tbsp Italian seasoning
1 Tbsp nutritional yeast
1 zucchini, ends removed and cut into French fry sticks

  2. In a bowl, combine flour, cornstarch, ½ teaspoon salt, garlic powder, and onion powder. Add plant-based milk and mix well to create batter.
  3. In another bowl, combine bread crumbs, Italian seasoning, nutritional yeast, and remaining salt.
  4. Dip each zucchini strip into the batter, then into the bread crumb mixture. Make sure to coat each strip completely with both mixtures.
  5. Lay the breaded zucchini fries on the prepared baking sheet and bake for 10 minutes. Remove from the oven, flip the fries, and bake for another 10 minutes.
