Lemon Herbed Chickpeas

  This traditional Spanish soup is perfect for hot summer days. It’s refreshing, light, and super easy to prepare. With only a handful of ingredients, it’ll be ready before you know it!

Prep time  15 minutes

Yield        4 cups

Ingredients

  • 4 large tomatoes, cut in quarters
  • 1 medium cucumber, peeled and seeded
  • ½ red bell pepper
  • ¼ white or red onion
  • 1 garlic clove
  • 1 tsp salt
  • ⅓ cup rice vinegar

Method

  1. Process all ingredients in a blender or food processor until smooth.
  2. 2 Refrigerate for 20–30 minutes.
  3. 3 Serve cold.
